The Metro C539-CDC-U Full-Height Holding and Proofing Cabinet features control modules including Moisture, Holding, and Combination Proof and Hold. A digital thermometer allows you to adjust the temperatures from 80°F to 200°F depending on the food you’re holding. The Metro holding/proofing cabinet also comes with four 5″ casters (two with brakes) for easy mobility.
